The secret behind the retention of the original taste even when 98% of the caffeine has been removed:
Conventionally made decaffeinated coffees do not taste the same as those that have caffeine because the components within the coffee beans that make the coffee taste delicious are lost during the decaffeination process. However, Sapporo Coffee-Kan’s original Caffeine-off blend has been made using a new method developed in Germany, called the “Liquid Dicarboxylic acid Extraction Method.” In this method, a combination of low pressure and temperature is applied over a prolonged period to remove 93%~98% of caffeinating components from the coffee beans, while preserving the flavor, taste, and aromatic components of the coffee beans. These coffee beans, which have retained their inherent taste and flavor, are carefully roasted using our original roasting method – CSR roasting (Charcoal Straight Roasting), a roasting technique that minimizes oxidation; these special processes result in a cup of coffee that has almost no caffeine but is as delicious as the original one.
Since no decaf coffee can match the flavor, many high-end restaurants offer this coffee with their evening dessert menu.
